To fill 3 molds (tiny ones) you’ll need:

  • 50cl of milk
  • 50g of butter
  • 100g of flour
  • 220g of sugar
  • 2 whole eggs + 2 egg yolks
  • 1 big spoon of vanillia
  • 2 big spoons of rhum

4 eggs (2 eggs + 2 yolks)

1 (or 2) little mice


Let’s Begin!

First, the milk and the butter…

Then the flour, sugar and eggs

And mix everything together

But seriously, who can wait that long?!
Legend says you have to wait 12 hours, some say you must wait 36 hours (sic!).
I say 12 seconds is plenty enough!

It’s Time to Cook!

Canelés de Bordeaux • Fill the molds, bake for 90 minutes 170°C (340°F)
Coat the molds with melted butter. Fill the molds, bake for 75 minutes 180°C (360°F)

Canelés de Bordeaux • Remove them when they have a "burnt head"
Remove them when they have a "burnt head"
